It was one of those days today where I just couldn't get rid of my craving for something sweet. I'm not much of a sweet tooth person because I tend to go for the savory, salty, lemony and spicy treats. I decided to experiment with a recipe from one of a few cookbooks that I've ever purchased, titled "The Oh She Glows Cookbook" by Angela Liddon. I'm not a vegan or vegetarian but I'm trying my best to eat healthier and more raw foods. Well, I decided to make her peanut butter cookie dough bites recipe because it was a no bake recipe; something quick and simple since I had two preschoolers vying for my attention. This recipe called for rolled oats and in my many efforts to make homemade granola bars, I've failed miserable so I was a bit hesitant to try this recipe out. But I was curious to try this out and my first attempt turned out a success; my five year old approves. One correction I would make is to blend the rolled oats even more finely. Overall, this recipe is a gluten-free, soy-free, nut-free and refined sugar free recipe that turned out delicious. I've made a few other recipes from this cookbook and so far, they all came out delicious and were fairly easy to make. My husband (who prefers to eat rather than cooked), helped me out on an enchiladas recipe and he enjoyed it. I highly recommend her book or go check out her blog.
Along with making a dessert, I loved how these cookie dough bites looked and knew this would be my photo of the day while I experiment with food photography. Who doesn't love a great food or dessert shot?
